Tabbouleh with a twist

Tabbouleh ticks all the boxes if your looking for a light and healthy salad. Its super fresh dotted with finely cut vegetables of cucumbers, tomatoes and spring onions. Dressed simply with tahini, olive oil and lemon juice.

Traditionally tabbouleh is made with couscous or cracked wheat but we couldn't pass up the opportunity to incorporate oats into the recipe! An ancient super grain they really are so versatile and not just for breakfast. Steel cut oats act very similar to arborio rice and pack a healthy alternative to wheat if your looking for a gluten free meal.

Recipe:

Chop finely: cucumbers, tomato, spring onion, parsley, mint

roast chickpeas

simmer 100g steel cut oats for 30 min

Top with zest of lemon and pomegranate seeds


Dressing: olive oil, lemon juice, tahini, soy sauce and a dash of honey.
