Veggie Oat Sausage Rolls

Really great weekend #lunch pleaser full of veggies and #oats.


640g ready to roll puff pastry

180g onions quartered

1 Tbsp dried oregano

100g walnuts

90g oats

150g feta cheese

50g breadcrumbs

3 medium eggs

1 Tbsp soy sauce

1/2 Butternut squash


Preheat oven to 200*c and line a baking tray with grease proof paper

Roast butternut squash pieces in the oven for 30mins

Place onions in a food processor and blend until fine

Add oregano walnuts and oats and the butternut squash when cooked and blend for a further minute

Add in the breadcrumbs, eggs and soy sauce and blend for a further minute

Place 1/4 of the filling along the edge of the pastry sheet half and roll. Cut each roll into equal size pieces and place on the baking tray.

Brush the pastry with egg and sprinkle some seeds on top

Bake for 20 mins or until crisp and golden.
